Healthy Salad Recipes with Greens


Salad 1


Ingredients

3. dried apricots, finely chopped  1 tbsp.. white wine vinegar 1 shallot, finely chopped 1 tsp. Dijon mustard 2 tbsp. olive oil 1 head butter lettuce 2 bunches Upland watercress 60 gr. feta, crumbled 2 scallions, thinly sliced 1 cucumber, thinly sliced

How to prepare:


  1. Place apricots in a small bowl. Bring white wine vinegar to a simmer, then pour over apricots. Let stand 10 minutes.

  2. In a small bowl, combine shallot and Dijon. Using a slotted spoon, transfer apricot to mustard mixture. Add in 2 tsp vinegar, then mix in olive oil. Discard remaining vinegar. 

  3. Toss together remaining ingredients, then toss with vinaigrette.

Enjoy!


Salad 2


Ingredients

1 bunch kale, roughly chopped

2 tbsp. olive oil

2 tbsp. lemon juice

1/2 cup shredded Parmesan cheese

1/3 cup sliced almonds, toasted

sea salt and black pepper


How to prepare:

  1. Add the kale to a large mixing bowl and drizzle evenly with the olive oil.  Using your fingers, massage the oil into the kale for 1-2 minutes until the kale has softened.

  2. Add in the lemon juice, Parmesan and almonds.  Toss until evenly combined.

  3. Taste and season with however much salt and black pepper that you’d like, then toss once more until combined.

  4. Serve immediately and enjoy!
