Buckwheat Peanut Butter Blondies


50 gr. butter

50 gr. peanut butter

50 gr. nuts flour

120 gr. buckwheat flour

2 eggs

1 teaspoon baking soda

a pinch of salt

100 gr. sweetener / Tagatose

250 gr. mascarpone

100 gr. coconut sugar

2 teaspoons rum


Melt the butter, peanut butter and 100 gr. Tagatose and stir until all mixed. Add 1 egg and continue stirring.

In a separate, but larger bowl add both nuts and buckwheat flour along with salt, baking soda. Gradually add the melted butter, peanut butter, Tagatose and stir until it starts forming a dough. (it might crumble, but don`t worry)

In a bowl, mix the mascarpone with the coconut sugar, rum and egg. Mix until combined and then pour it over the already formed dough and stir again.Now the dough will not be crumbly.

Pour the mixture in a pan sprayed with a bit of oil. Bake for 15-20 minutes at 180C.
