2 medium cucumbers, preferably garden-fresh
3-4 tbsp. of Greek yogurt
fresh ground salt and pepper to taste
If you have garden-fresh cucumbers there is no need to peel. For store-bought cucumbers, peel thin stripes from the cucumbers, and cut in half lengthwise, and then cut into slices about 1/2 inch thick.
Put cucumbers in serving bowl and dress liberally with the Greek yogurt.
Grind black pepper and salt over and serve.
